We have both the Bose T4s and T8s both awesome mixers.
Question 1 - with the new T8s using my Neuman KMS105 with two Bose L1 Model 2's connected can I leave the pan to the middle or will it cause phasing issues or feedback? Will I lose the gain? The Bose L1 Model 2's are always about 30 ft apart and at the back?
Question 2 - Can I use Channel 9/10 for keyboard running stereo we don't need any of the effects?
I am also going to experiment with the Cocktail setup soon.

30 feet apart is good. The minimum recommended by Bose is 20 feet when running Dual Mono (what you are doing with the pan up the middle).

Yes. That's an ideal application for the Aux Inputs.
Bose engineered the T8S ToneMatch mixer to have eight full-function channels and twoAuxiliary inputs. The Aux inputs 9/10 are routed directly to the Main Output. You can use the Pan and Level adjustments accessible through the PAN/AUX menu. There are no changes to routing, or signal processing available. Only T8S ToneMatch mixer channels one through eight can be routed to the Aux Outputs.
